1 cup long-grain white rice
2 tablespoons olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 can (8 oz) tomato sauce
2 cups chicken broth
1 teaspoon ground cumin
1 teaspoon paprika
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Instructions:
Rinse the rice under cold water until the water runs clear.
In a large skillet, heat olive oil over medium heat.
Add chopped onions and garlic, sauté until softened.
Add rice to the skillet, stirring constantly until the rice is lightly browned.
Pour in the tomato sauce, chicken broth, cumin, paprika, salt, and pepper. Stir to combine.
Bring the mixture to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and the liquid is absorbed.
Remove from heat and let it sit, covered, for an additional 5 minutes.
Fluff the rice with a fork, garnish with fresh cilantro if desired, and serve.
